The Recipe (4 servings)
500g pasta (penne or fusilli)
3 tbsp extra virgin olive oil
1 clove garlic, finely chopped
400g cherry tomatoes, halved
Freshly ground black pepper
Flaky sea salt (for the finishing touch)
Method
1. Cook the pasta al dente in well-salted water.
2. Meanwhile, heat the olive oil in a pan over medium heat.
3. Add the garlic and sauté for 30 seconds until fragrant.
4. Add the cherry tomatoes. Cook for 5–7 minutes until slightly softened.
5. Drain the pasta, add it to the pan, and toss well.
6. Generously season with black pepper and a pinch of flaky sea salt.
